Squash and Spinach Lasagna – Conquered(ish)

Last week, in this post, I mentioned this recipe.

I have not stopped thinking about it since. The colors, textures and promise of indulgences like cheese and pasta nudged even my most jaded holiday sensibilities over the line into straight up festive.

When the hubs was making a weekend trip to the store for potatoes and onions (or maybe whiskey), I handed him a list that included beautiful things like ricotta cheese, butternut squash and whole wheat noodles (and also whiskey). My plan was to save the joyous cooking for post-baby-bedtime/cocktail hour.

Meatless Red Lasagna

Get ready for another Haphazard Recipe!

A few days ago, I was trying to figure out what to do with the crumbled remains of some homemade veggie burgers. My husband – wonderful MacGyver-style house hippy that he is – suggested that I season it and make lasagna.

I couldn’t see how this would work, as the meat substitute bore a distinct peanut flavor from the peanut butter in the burger recipe. But since I a) didn’t have a better idea, b) knew there was a partially empty box of lasagna noodles in the pantry, and c) will jump on any excuse to eat pasta, I decided to take the idea and run with it.
